Polenta is a product made form ground cornmeal. You can find it dry, or pre-made in a tube in the refrigerated section, usually by the yogurt and hash browns.
Ingredients:
1 Tube of organic polenta
Olive oil
Salt, pepper
Any other seasoning, like old bay
Directions:
1. Open a tube of polenta and slice it length-wise into french fry shapes.
2. Put the polenta fries in a bowl and toss with olive oil, salt, pepper, and any other seasoning you would like.
3. Bake the fries on a cookie sheet sprayed with non-stick spray. Bake at 450 for 30-45 minutes …

Vegetarian Fried Rice
1 package frozen steamable brown rice
1 1/2 cup frozen peas, carrots, corn or any other vegetable you would like
1 cup diced mushrooms any type you would like
2 cloves garlic, minced
1/4 cup chopped green onions (optional)
1/2 block cubed firm tofu
soy sauce to taste
1 tablespoon lime juice (optional)
olive oil for frying
1. Press the tofu between some paper towels for 10 minutes to remove excess water. I usually put a plate on top and weigh it down with a can.
