holiday recipe – Cumin Pumpkin soup

With the holidays just around the corner I thought I would start sharing some festive recipes that can be enjoyed by the whole family.
Today We will start with :
Cumin Pumpkin Soup – Yield approximately 1 quart- 32 oz.
Prep time 5-10 minutes
cook time 10- 15 minutes
Ingredients
1 lb. Fresh Pumpkin puree or [1 - 15 ounce can pumpkin puree (NOT pie filling)]
1 1/2 cups Chicken stock or Vegetable stock
1 cup low-fat milk
2 tsp ground cumin
1 tsp sage
1/2 cinnamon
1/4 tsp nutmeg
2 bay leaves
Salt and pepper
Fresh sage leaves
pumpkin seeds, for garnish
Directions
1.) In a medium bowl, whisk together pumpkin puree, chicken or veggie stock, milk, sage,cinnamon,nutmeg and cumin.
2.) Place in a saucepan over medium heat. stirring occasionally to make sure your soup does not scorch
3.)After 5 minutes add bay leaves season with salt and pepper.
4.)Simmer 10 minutes. keep stirring occasionally to keep from scorching
5.)Remove from heat,
6.) remove bay leaves and season, to taste, with salt and pepper.
7.)Garnish with sage & pumpkin seeds before serving.
